Oat and Berry Scones

Assalamu alaykum! Peace be upon you!

It is the 7th day of Ramadan (8th for some) and one of my superfoods that I love to eat for energy and to stop me from feeling hungry is oats. Today I was a guest on Newcastle Fast FM radio show and gave the recipe for my oat and berry scones. Its very simple to make and only takes bout 20 mins in the oven.



The ingredients are:

1/3 cup butter
1/4 cup sugar
1 cup of self raising flour
1 cup of porridge oats
about 2/3 cup of milk or cream
1 tsp vanilla essence
1/2 cup of fresh or frozen berries (chop any large berries into smaller pieces)

Preheat your oven to 180C. Put the butter, sugar, flour and oats into a large bowl and mix with your fingers until they resemble crumbs. Add the vanilla essence to the milk or cream in a separate cup. Slowly add the milk or cream bit by bit mixing by hand. Don't rush and add all of the milk or cream at once because you might not need all of it, just keep adding until all the breadcrumb mix is gathered together into a firm dough. Finally fold in the berries carefully, its a bit messy because they might bleed out a bit but that's OK. You can then roll out and cut into whatever shapes you like. I usually just roll it into a ball and pat it down a little before cutting it into 8 even sections.

Put on a baking tray and bake in the oven for 15-20 minutes.
