Winter Berry with Crumble Topping Cake

I just made this yesterday. Its my own recipe and I was really happy with the results alhamdolillah. It really was  delicious mashaAllah. If you like cakes and desserts its worth a try.



250g butter
1 cup granulated sugar
6 eggs
2 cups self raising flour
1tsp vanilla essence
50g roughly chopped white chocolate
50g roughly chopped dark chocolate
1 cup winter berries

For the topping:
1 cup plain flour
2/3 cup demarera sugar
1/3 cup butter
1/2 cup dessicated coconut (optional)


Set your oven at 180 degrees C and grease and line a large baking tray with greaseproof paper
Cream the butter and sugar together in a mixing bowl with the vanilla essence. Add the eggs one at a time mixing well between each addition. Then sieve in the flour one cup at a time mixing well after each addition. add the chopped white and dark chocolate. Last add the fruits and mix in gently so as not to mash them.

In another bowl add the plain flour, butter and demarera sugar. Mix with your fingers untill it looks like breadcrumbs then add the dessicated coconut and mix in.

Spoon the cake mixture into a large baking tray and spread evenly making sure the fruit is distributed all over the tray. Next sprinkle the crumble topping evenly over the top and pat down firmly.

Put into the oven and bake for about 40 minutes or until golden brown on the top.

Take out and leave to cool in the tray. Then cut into squares and serve warm or when completely cooled, it tastes delicious either way :)
