Carrot Cake Recipe

250g butter
1 tsp vanilla essence
1 and 1/2 cups sugar
1/2 tsp cinnamon or nutmeg
4 eggs
4 cups flour
1 and half cups finely grated carrot
2/3 cup pineapple juice

Mix the butter, sugar and vanilla essence till smooth, then add the eggs one at a time beating in between each addition. Then add the grated carrot and mix in. Next add the flour a cup at a time with the cinnamon or nutmeg and mix well between each addition. Lastly add the pineapple juice and mix in gently. Fold gently into a 10 inch round baking tin and put into a hot oven of 180 degrees C for 60-70 minutes.

Once cooled you can add a frosting if you want or just have as it is. I added a cream cheese frosting to the top of mine as you can see from the picture. I mixed about 125g of cream cheese with about half a packet of Tate n Lyles icing sugar.
